Summer Mango Salsa with Flaked Salmon
Salmon and mango are the perfect match for Tostitos® Multigrain Rounds Tortilla Chips!
Ingredients
- 1 bag (290 g) Tostitos® Multigrain Rounds Tortilla Chips
- Olive oil
- ½ lb (250 g) salmon fillet
- Pinch salt and pepper
- Lime wedge
Salsa:
- 1/3 cup (75 mL) Tostitos® Roasted Red Pepper Salsa
- 1 ripe mango, peeled and diced
- 1/3 cup (75 mL) chopped cilantro
- ¼ cup (60 mL) chopped red onion
- Lime wedge
How to make it
- Preheat oven to 375°F (190°C). Rub olive oil over salmon skin. Turn over; season salmon fillet with salt and pepper; drizzle with squeeze of lime juice. Bake for about 12 minutes or until salmon flakes when tested. Let cool. Flake salmon using two forks.
- Salsa: In mixing bowl, combine salsa, mango, cilantro, onion and squeeze of lime juice. Gently mix in flaked salmon.
- Serve salmon mixture over tortilla chips.
Tip: Substitute your favourite alternative fish or shrimp for salmon.
