Red Pepper Pesto Bruschetta
Take Bruschetta to the next level with this Red Pepper Pesto Bruschetta recipe!
- 1 bag Tostitos® Scoops!® Tortilla Chips
- 1 bunch fresh basil, finely chopped
- 3 whole tomatoes, diced
- 1 small onion, diced
- 1 cup crushed pecans
- 1 cup fresh roasted red pepper, cut into strips
- 1 cup shredded Parmesan cheese
- 1 cup extra virgin olive oil
- 4 cloves garlic, minced
- 1 tsp kosher salt and pepper
How to make it
- Mix together tomatoes, basil, onion, pecans, red pepper strips, Parmesan cheese, olive oil, garlic, salt and pepper.
- To serve, spoon mixture into Tostitos® Scoops!® tortilla chips.
Tip: Omit pecans for a nut-free option!
