Mini Quinoa Power Bowls
Power up your party with these protein packed snacks. With quinoa, avocado and cranberries these bowls are perfect for health conscious guests.
- 32 Simply Tostitos® Organic Scoops!
- 2 cups (500 mL) shredded kale (ribs and stems removed)
- 1 cup (250 mL) cooked quinoa, cooled
- 1 ripe avocado, finely chopped
- 1/2 cup (125 mL) crumbled goat cheese
- 1/3 cup (75 mL) dried cranberries
- 1/3 cup (75 mL) Italian dressing
How to make it
- Toss together kale, quinoa, avocado, goat cheese and dried cranberries.
- Drizzle dressing over top and toss to coat. Spoon evenly into Scoops!
