Huevos Rancheros Tapas
Here’s a take on a classic Mexican breakfast that’s full of flavour – perfect for any occasion!
- 14 Tostitos® Scoops!® tortilla chips
- 3 tbsp (45 mL) Tostitos® Salsa
- 3 tbsp (45 mL) refried beans
- 2 large eggs
- 1/4 cup (60 mL) grated queso fresco cheese
- 3 tbsp (45 mL) sour cream
- 1/4 small ripe avocado, sliced
- 1 tbsp (15 mL) chopped fresh cilantro
- 1 ime, sliced
How to make it
- Preheat oven to 350°F (180°C).
- Place Tostitos® Scoops!® tortilla chips on baking sheet; fill with refried beans. Press small indent into centres.
- In small bowl, combine eggs and cheese; spoon evenly into tortilla chips. Bake for about 5 minutes or until egg mixture is set.
- Remove from oven; top with dollop of Tostitos® salsa, dollop of sour cream, slice of avocado and sprinkle of cilantro.
- Transfer to serving plate; garnish with lime. Serve immediately.
